GBTR: Coconut Curry
Growing Beyond the Recipe: Coconut Curry

2 Cloves Garlic
2 Stalks Lemongrass
1 Tablespoon Ginger
2 Bell Pepper
1 Bunch Cilantro
1 Cup jasmine rice
2 Cups water
Rinse rice till water turns clear & drain.
Combine rice, water, and salt, and bring to a strong simmer.
Once at a strong simmer, turn the heat down to low simmer.
When rice is done, fluff with chopsticks, and leave covered till you are ready to serve.
Heat oil. When the oil is hot, sear the eggplant till browned, and reserve for later.
Saute onions and garlic for 5 minutes. Then, add curry paste and cook for another 5 minutes on low heat.
Add the coconut milk, and turn to medium heat.
Add potatoes, then carrots, and cook for 10 minutes.
Add remaining ingredients (except for the cilantro), and cook on medium-low heat till potatoes are tender.
Season with salt.
Serve with rice & cilantro.
